The Great Gol Guppa :D

Unreplacable, unparalleled and unianimously as the most hogged and most loved street food in India. Every Indian has one of his favorite roadside vendor selling this delicacy, sold by vendors carrying this Khomcha (straw stand stall) outside our schools, colleges, at the cluster of convenience shops near our house, famous tourist places.

Puchkaa of Kolkata, Pani Puri of Mumbai, and Gol Guppa of the North. Though there is very little variation across this large distance of cities but the lovers can identify it in just one go .. its not their own :P

Now, a little something about what exactly is a Gol Guppa. These are basically inflated hollow balls made by frying a little coarser wheat flour (Suji, Rawa) often stuffed with a filling, which is the major variant across the places.

Some stuff it with boiled Cholle (Chikpeas) mashed with boiled potato in a chutney (mint and chilli and/or tamarind sauce) - Puchkaas have this filling.

While in the North too it either has the same chickpea filling or plain boiled and potatoes.

In the west the Pani Puri is stuffed with a filling made of boiled potatoes and water soaked Boondi ( golden fried beads of gramflour ) with either a mint and chilli or tamarind Chutney.

So these fried, hollow balls of flour stuffed with these many kinds of fillings are then filled till overflowing with two choices of diluted chutney you can say which again is made up of

1. A spicy combination of Crushed cummin seeds, mint, chillies
2. A sweet option made with Tamarind and Jaggery

These stuffed overflowing balls are then served in cups made of dry leaves... hehe on a personal basis. He will keep serving you as you pop one after one inside your mouth.

Oh btw my favorite of these all variants is a Puchka of Kolkata, its absolutely fantastic :D
